Preparation:
Preheat oven to 450 degrees. Chop and mince – green onion, red bell pepper, chicken and jalapeno pepper. Keep separate. Shred Monterey Jack Cheese.
Directions:
In a large frying pan, heat oil over medium heat.
Stir in Green Onion and Red Pepper. Cook until tender, about 5 minutes.
Add chicken. Mix well.
Add Corn, Black Beans, Spinach, Jalapeno Pepper, Cumin, Chili Powder, Salt and Red Pepper.
Cook and Stir about 5 more minutes, until well blended and tender.
Remove from heat and stir in cheese. Mix well until melted.
Spoon 2 TB of mixture onto Egg Roll Wrapper. Wrap sealing edges with water.
Place on greased cookie sheet and spray with Pam.
Bake at 450 degrees for 15-20 minutes, turning over after 10 minutes. Cook until golden brown. Serve with Cilantro Sauce and enjoy!
