Ingredients
4 TB Olive Oil
1 Medium Yellow Onion, chopped
4 cloves Garlic, chopped
1 1/2 tsp. Cumin
1 tsp. Salt
1 tsp. Paprika
1 large chipotle chile in adobo sauce, finely chopped, sauce reserved
**or 1 Pablano Pepper, finely chopped
** if using pablano pepper you'll need 1 small can of chipotle sauce
3 chicken Breasts, thinly sliced and chopped
2-14.5oz can diced tomatoes with juice
15 oz cans chili beans with juice
15oz can Black Beans, drained and rinsed

In a large pot, heat the olive oil over medium heat.
Add the onions, garlic, cumin, salt, paprika and chipotle or pablano pepper.
Cook, stirring occasionally until the onion is softened. About 7 minutes.
Add the chicken and cook, stirring until the meat begins to change color, about 5-7 minutes.
Stir in the tomatoes, beans and 1 TB of adobo sauce or 1 can of chipotle sauce
Bring to a boil.
Lower the heat and simmer the chili, stirring often, until thickened, about 25-30 minutes.
Add more of the adobo sauce to taste, if desired.
Serve with grated cheese and sour cream
