Strawberry Shortcake

Ingredients

2 ½ cups Bisquick
½ cup Sugar plus 1/3 cup Sugar
2/3 cup Milk
4 TB Melted Butter

2 quarts fresh Strawberries
1/3 cup Sugar
2 TB Orange Juice

1 cup Whipping Cream
2 TB Sugar

Instructions

Created on April 19th, 2010

Preheat oven to 450 degrees.

Wash strawberries. Remove hull and slice, placing into large mixing bowl.
Add 1/3 cup sugar and orange juice. Mix well and refrigerate.

In another large mixing bowl using a fork, combine bisquick, ½ cup Sugar and 2/3 cup Milk.
Turn out onto a well floured surface.
Roll into a rectangle about ½ inch thick.
Brush with melted butter and sprinkle with 1/3 cup sugar.
Roll up and cut into 8 slices.
Place slices on baking sheet lined with parchment paper.
Slightly flatten with hand.
Brush with butter.
Bake at 450 degrees for 9-10 minutes or until golden brown.
Remove from oven and let cool.

In a small mixing bowl, using an electric mixer beat whipping cream with 2 TB of sugar until stiff peaks form 3-5 minutes. Refrigerate till ready to use.

To serve: Split biscuits in half horizontally. Place one biscuit on bottom of plate and spoon strawberries over top; dollop with whipped cream. Cover with biscuit top and finish with a little dollop of whipped cream and strawberries. Enjoy!
