Sugar Lip's Brownies

Ingredients

1 1/2 sticks salted butter

1 1/2 cups sugar

3/4 cocoa powder

1/2 tsp baking powder

1/2 tsp dry instant coffee, or a splash of your morning brew ;)

2 tsp vanilla

2 large eggs

3/4 cup flour

3 oz semi sweet chocolate, or dark chocolate cut up (or chocolate chips in a pinch)

  1. Spray an 8×8? pan with baking spray and set aside. Preheat the oven to 325 degrees. Place butter in sauce pan and slowly brown. After a few minutes it browns quickly so watch carefully. Meanwhile measure out sugar, cocoa, baking powder, coffee, and vanilla.

  2. On low heat add sugar, cocoa, baking powder, coffee, and vanilla to the pan with the browned butter. Stir well to incorporate. Remove from heat and let cool for about 5-10 minutes. Chop your chocolate if you haven’t already while this cools.

  3. Add eggs to chocolate mixture one at a time (making sure it is not to hot, or your eggs will cook). Add the flour and stir with a wooden spoon until incorporated. Add the chopped chocolate, give a quick couple of stirs and quickly scrape the mixture into your sprayed baking dish (8×8?). Give the batter a big swirl to create some nice texture on top of the baked brownies. Cook for about 25 minutes give or take…usually give. Until the pan is not jiggly when lightly moved.

  4. Cool brownies completely. Cut into squares with a plastic knife (this will help with sticking. Just use a sharp knife if you do not have any plastic around.) In a bowl pour 1/2 cup of sugar. Dip the fresh cut edges of the brownies into the sugar to coat the edges. Enjoy with a glass of milk!
