Taco Lasagna


1 lb Lean Ground Beef
1 pkg Taco Seasoning
1 can Yellow Corn with red&green peppers, drained
1/2 cup Water
1 (8oz) ctn Onion & Chive Cream Cheese
2 cups shredded cheddar/jack cheese, divided
4 1/2 cups Salsa
9 no-boil Lasagna Noodles

Cook ground bee in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink; drain and return to skillet. Stir in taco seasoning, corn and 1/2 cup water. Cook, uncovered, stirring occasionally until thickened, about 5 minutes. Add cream cheese, stirring until melted. Remove from heat and stir in 1 cup of the shredded cheese.
In a lightly greased 9x13 baking dish, spread 1 cup salsa. Layer with 3 lasagna noodles (don't let noodles touch each other or side of dish), next add 1/2 of the ground beef mixture and 3/4 cup of salsa. Repeat layers starting with the 3 lasagna noodles, remaining ground beef and 3/4 cup salsa. Top with remaining 3 noodles and salsa, covering noodles completely. Sprinkle evenly with remaining 1 cup of cheese. Baked covered at 375 for 30 minutes. Uncover and bake and additional 10 minutes or until cheese is melted.

Let stand 5 minutes before serving. Serve topped with sour cream, cilantro and salsa. Enjoy!
