Twice Baked Sweet Potato


4 Sweet Potatoes
4 TB Brown Sugar
4 TB Butter, room temp
4 oz Cream Cheese, room temp
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 tsp. Ginger
pinch of salt and pepper
1 cup Mini Marshmallow

Streusel Topping:
3 TB Flour
1/4 tsp. Cinnamon
1/4 cup chopped Walnuts
2 TB Butter
3 TB Brown Sugar


Created on November 5th, 2012

Preheat oven to 400 degrees.
Place sweet potatoes on a baking sheet and place in oven.
Bake for 1 hour or until soft
Let cool and cut in half
Carefully remove pulp from skin and place pulp in large mixing bowl.
Place skin of potato on baking sheet and set aside.
In another mixing bowl, combine Brown sugar, butter, cream cheese, cinnamon, nutmeg, ginger salt and pepper.
Mix well.
Add butter mixture to potato pulp and fold in completely.
Place 5-7 mini marshmallows in potato skin.
Add the potato mixture to the top of the marshmallows.
In another mixing bowl, combine streusel topping ingredients and sprinkle on top of potato.
Place in oven and bake 10-12 minutes or until golden brown.
Serve and enjoy!
