Orange Chicken

Ingredients

4 chicken breasts, cut in 1' pieces
1/4 cup vegetable oil
1 cup orange juice
1/4 cup soy sauce
1/2 tsp salt
3 cloves of garlic, minced
1 TB brown sugar
1/2 tsp red pepper flakes
2 TB cornstarch
1 onion, cut in quarters
1 head of broccoli florets

Instructions

In a small bowl,combine orange juice, soy sauce, salt, garlic, brown sugar, red pepper flakes, and cornstarch. Mix well and set aside.
Heat oil in a large skillet over medium high heat. When oil is hot, add chicken. Saute until no longer pink inside (about 7-10 minutes).

(While chicken is cooking, in a saucepan cook minute rice following the directions on the package.)

Add orange sauce mixture to chicken and cook for 5 minutes or until sauce thickens. Add broccoli florets and onion, cover and cook 2 minutes.
Serve over steamed rice.
