Sour Cream Cranberry Bars

Ingredients

1 pkg. Craisins
1 cup Sugar
3 Eggs
2½ TB Corn Starch
1½ cup Sour Cream

1 cup Brown Sugar
1¾ cup Old fashioned Oats
1 tsp. Baking Soda
½ tsp. Salt
1¾ cup Flour
1 cup Butter, softened

Instructions

Created on April 18th, 2006

Preheat oven to 350 degrees.
Spray 9x13 baking dish with Bakers Joy.
In a mixing bowl, combine eggs, sour cream, sugar and cornstarch. Stir in craisins.
Pour mixture into a medium saucepan and cook over medium heat until thickens. Set aside to cool.
In a large mixing bowl, combine brown sugar, oats, baking soda, flour and salt. Blend in butter until mixture is crumbly.
Press ½ of mixture into pan. Pour cooked mixture over oat mixture. Crumble rest of oat mixture on top. Press into sour cream mixture.
Bake for 20 minutes. Let cool and serve. Enjoy!
